Fall Harvest Hash
Ingredients:
1 Lb Protein (I used chicken breast this time but I prefer ground chicken/turkey/beef.)
1 Tbsp. Cooking Fat (Coconut Oil/Ghee)
1 Medium Sweet Potato, Diced
2 Cups Brussels Sprouts, Trimmed and Quartered
1 Apple, Cored and Diced
1/2 Onion, Diced
1/4 Cup Pecans, Chopped
1/2 tsp. Red Pepper Flakes
1/2 tsp. Chili Powder
1/2 tsp. Oregano
1/2 tsp. Garlic Powder
1/2 tsp. Cinnamon
1/2 tsp. Sea Salt
1/2 tsp. Black Pepper
1/4 Cup Apple Cider/Juice
1 Tbsp. Apple Cider Vinegar
Recipe:
Heat the cooking fat in a large skillet over medium-high heat.
Add the ground meat (or protein of choice), breaking it apart with a wooden spoon and cooking for 3-4 minutes.
Add the sweet potato, brussels sprouts, apple, onion, pecans and spices.
Saute until the meat is fully browned and the sweet potatoes are tender.
Pour in the apple cider/juice and apple cider vinegar.
Stir and cook for another 3-5 minutes.
Serve and enjoy!
