Summer Shrimp Ceviche Recipe

Ingredients:

-1 lb Uncooked Shrimp Chopped

-1/2 Cup Fresh Lime Juice

-1/2 Red Onion Chopped

-1 Jalapeño Chopped

-1 Mango Chopped

-1 Cup Cherry Tomatoes Cut

-1/4 Cup Cilantro Chopped

- 2 Avocados Diced

-Salt & Pepper

⠀⠀⠀⠀⠀⠀⠀⠀⠀

Recipe:

-In a large bowl add the shrimp and lime juice. Let sit for 5 minutes until the shrimp turn opaque - the lime juice will “cook” the shrimp.

-Add the onion, jalapeño, mango, tomato and cilantro and toss with the shrimp and lime juice. Cover and refrigerate for an hour.

-Before serving, add the avocados and salt and pepper to taste.

-Enjoy as is or pair it with tortilla chips or whatever your heart desires!
